Snickers Cheese Cake

This is my modified version of a recipe I found on the back of a tin of condensed milk. It is egg-free, gelatine-free and quick.

What you’ll need:

400 grams of block cream cheese, softened
1 400ml tin of condensed milk
1 tsp vanilla flavouring (I use imitation as it doesn’t contain alcohol)
3 tsp lime juice
2 Snickers bars, chopped
200 gm plain biscuits
125 gm butter, melted 

Preparation:

1. Prepare a 20 cm round spring form tin by lining sides with baking paper.
2. Process biscuits in food process for 30 seconds, then add butter until mixture starts to come together.
3. Press biscuit mix in to the base of the cake tin, then place in refrigerator for 30 minutes.
4. Using electric mixer, mix cream cheese and condensed milk until evenly combined (about 2 minutes).
5. Add vanilla and lime juice, mixing for 30 seconds.
6. Using a wooden spoon, stir through chopped Snickers bars, not over mixing as this will cause the mixture to color.
7. Pour in to base, distributing it evenly, then refrigerate for at least 4 hours, or overnight (overnight is better).

TIPS: To make this cake a real beauty, drizzle it with melted chocolate and sprinkle over ½ a cup of chopped peanuts.

VARIATIONS: Instead of Snickers, stir through chopped Mars Bar, or top with passionfruit pulp, for a healthier option.
